Easy Pumpkin Pie Recipe for Thanksgiving

Serving size: 8

Prep time: 20 minutes

Baking time 40 minutes

Cooling time: 2–3 hours

Oven temperature: 400°F

Ingredients

Pie Crust

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

Pumpkin Filling

  • 1 can (15 oz) pumpkin purée
  • ¾ cup brown sugar (or a mix of brown and granulated sugar)
  • 2 large eggs
  • 1 can (12 oz) evaporated milk
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

If you want to try your hand at making your crust from scratch, the following ingredients will be needed to make the dough:

  • 1 â…“ All-purpose flour
  • ½ teaspoon salt
  • ½ cup cold butter
  • 3 tablespoons cold water, or more as needed.

Instructions

#1 – Prep the oven and crust: Preheat your oven to 400°F. Place your unbaked pie shell into a 9-inch pie dish and crimp the edges.

#2 – Mix the filling: In a large bowl, whisk together the pumpkin puree, eggs, brown sugar, salt, and other spices until smooth. Gradually whisk in the evaporated milk until the mixture is silky and well combined. An electric mixer may also be used.

#3 – Assemble and bake: Pour the filling into the pie shell. Bake at 400°F for 40 to 60 minutes. The pie is done when the edges are set and the center has a slight wobble.

(*As a tip – Cover the crust edges with foil or a pie shield if partway through they brown too quickly. This is to prevent the edges from burning as the filling cooks.)

#4 – Cool and serve: Remove the pie from the oven and let it cool on a wire rack for at least 2 hours. This will allow the custard to set. Serve the pie chilled or at room temperature with whipped cream on top.

Use this recipe to help you celebrate the joy, warmth and gratitude of the season.

Happy Thanksgiving!
